The problems of the White Bean and Basil Hummus

On a random trip to Trader Joe's I happened to pick up a container of their White Bean and Basil Hummus. It was so good! But it presented a few problems.


Problem #1 -

I don't live near a Trader Joe's. So, if I want to eat it often I'm out of luck!


Problem #2 -

The container was quite small and wasn't really enough for my family.


To solve these problems, I thought I'd look up a "copycat recipe" for it and I found one! So, I made it at home and it was great and I could double the recipe.


Problem #3 -

It was a little tedious of a recipe and called for fresh basil. I only have fresh basil on hand in the summer and don't like to buy it in store because those little fresh herb packets are pricey! Don't you think? lol!


The recipe I am sharing today is a solution to problems 1, 2 and 3. I realized that a lot of the ingredients could be simplified if I used pesto instead the fresh basil. It covered several of the ingredients. It was easier and more accessible.


I like to make and freeze pesto during the summer (when the basil is poppin') for later use. But it's found in all grocery stores, too!


Hummus is such a great dip to have on hand - adding lots of fiber and protein to salads and veggie trays! I hope you give my problem-solving recipe a try!



White Bean and Pesto Hummus Recipe


Ingredients:

1 can of white great northern or cannelini beans, drained

1/4 cup prepared pesto*

juice of 1/2 a lemon

1/2 teaspoon of salt

room temperature water

olive oil, optional


Instructions:

Mix beans, pesto, lemon juice and salt in a food processor**.

While the hummus is mixing, add a Tablespoon of water at a time to thin to desired consistency.

Process until smooth, about 2 minutes.

Taste test and add more salt if needed.

Transfer to serving dish or an airtight container if using later.

Drizzle with olive oil before serving, optional.


Notes:

*There are a lot of different types of pesto out there, I use traditional Italian style which is what you will find in most grocery stores.

**A blender could work for this, but it doesn't mix quite as well.


I always double this recipe, too! Trust me, you'll want more.


That's it! A super flavor and unique hummus dip that packs a punch of fiber and protein!
